Cube pork. Comine eggs, flour, and cornstarch. Add pork. Coat thoroughly and refrigerate at least 30 minutes. Mix together liquids, sugar, and cornstarch. set aside. Heat about 1 inch of oil in skillet. Add pork and cook until golden. Remove and drain. Pour off all but 2 Tbsp. oil and add vegetables. Heat thoroughly. Add meat, ginger, and sauce. Heat until good and hot. Serve over rice.
